A donabe is more than a beautiful Japanese clay pot. It is cookware with distinctive thermal properties that can create a gentle, moisture-rich cooking environment for rice, vegetables, fish, meats, soups, stews and braises.
If you've just purchased a donabe, however, there's one important step before you begin:

Before Your First Use: Season Your Donabe
Traditional donabe are made from porous ceramic. Seasoning with rice porridge allows rice starch to work into the microscopic pores and small irregularities in the clay body.
How to Season Your Donabe Step-by-Step
Rinse the donabe. Gently rinse the interior with water. Make sure the exterior—especially the bottom—is completely dry before placing it over heat.
Add cooked rice and water. Fill the donabe about 70–80% with water and add approximately 1/5 the volume of cooked rice.
Bring to a gentle simmer. Place the donabe over low heat and gradually bring the mixture to a simmer. Do not use high heat.
Cook the rice porridge. Simmer gently for approximately 30–40 minutes, stirring occasionally.
Turn off the heat and cool completely. Allow the rice porridge to cool naturally inside the donabe. This gives the starch time to settle into the porous ceramic body.
Rinse and thoroughly dry. Remove the porridge, rinse the donabe gently and allow it to dry completely before storing or using it.

Everyday Donabe Care
Once seasoned, your donabe will perform beautifully if you follow these daily care tips:
A donabe should be treated differently from stainless-steel cookware, but different care does not mean that it is inherently fragile.
A few habits will help keep your donabe performing beautifully:
Use low to medium heat unless your donabe manufacturer specifies otherwise.
Never place a donabe with a wet exterior or bottom directly over a flame.
Avoid sudden, extreme temperature changes.
Do not heat an empty donabe unless the manufacturer specifically says it is designed for dry heating.
Avoid leaving food or liquid in the donabe overnight.
Hand wash rather than placing it in a dishwasher.
Avoid abrasive cleaners and harsh scouring pads.
Allow the donabe to dry completely before storing.
Store with the lid slightly ajar or separately so moisture can escape.
Avoid stacking heavy cookware on top of your donabe.

After cooking:
Allow the donabe to cool before washing.

Hairline Cracks
Fine surface lines can develop in glazed ceramics over time and are not necessarily an indication that the donabe is unusable.
If you see a deeper crack, leakage, or a crack extending through the ceramic body, discontinue use until you can determine whether the donabe remains safe to cook with.
Odors
Because donabe are porous, odors can sometimes linger if food is left in the pot or if the vessel is stored before it has completely dried.
Thorough drying and good ventilation during storage help prevent this.
Stains & Changes in Appearance
A donabe will often develop changes in color and appearance with use.
Rather than expecting the pot to remain cosmetically identical to the day it was purchased, think of these changes as part of cooking with a natural ceramic material.
Nearly 300 Years of Banko Ware
Many of the donabe we carry are Banko ware, or Banko-yaki, made in and around Yokkaichi in Japan's Mie Prefecture.
The Banko tradition dates to the mid-18th century during Japan's Edo period, when Nunami Rozan began producing distinctive ceramics in the region.
But what makes the Banko story particularly interesting is that the tradition didn't simply preserve old methods.
It continued to evolve.
Generations of ceramic knowledge were eventually combined with advances in materials and manufacturing. In the mid-20th century, Banko manufacturers developed specialized heat-resistant ceramic bodies that transformed the performance of modern donabe.
Today, donabe are one of the products most closely associated with Banko ware.
The result is cookware that brings together centuries of Japanese ceramic tradition with modern materials knowledge.
Not Just a Clay Pot: Purpose-Engineered Cookware
One of the most important developments in modern Banko donabe was the use of petalite, a lithium-bearing mineral with extremely low thermal expansion.
Banko technical literature describes heat-resistant donabe clay containing approximately 40–50% petalite.
Why does this matter?
Most materials expand when heated and contract as they cool. If different parts of a ceramic vessel expand at significantly different rates, internal stresses can develop and eventually cause cracking.
Petalite helps dramatically reduce that expansion.
The result is a donabe body with:

High heat resistance
Strong resistance to thermal shock
The ability to withstand direct-flame cooking when properly used
Banko manufacturers didn't simply accept the thermal limitations of ordinary earthenware.

Durability Isn't Just One Thing
This brings us to an important distinction:
Mechanical durability ≠ thermal durability ≠ cooking performance.
Stainless steel is unquestionably more mechanically durable. Drop a stainless-steel pot and it probably won't crack. Drop a donabe and it may.
But that tells us very little about how the two materials actually cook food.
A properly formulated Banko donabe can be remarkably thermally durable because its low-expansion ceramic body was specifically developed to withstand the stresses of direct-flame cooking.
And ceramic and stainless steel behave very differently once they're heated.
Neither material has to be better at everything.
They cook differently.
Why Does a Donabe Cook Differently?
There isn't one "magic" property responsible for donabe cooking.
Several characteristics of the ceramic vessel work together.
The Ceramic Body Stores Heat
A thick donabe takes time to heat, but once hot, its ceramic body stores a substantial amount of thermal energy.
Unlike thin, highly conductive metal cookware, a donabe doesn't respond instantly to every small change in burner temperature.
Instead, it absorbs heat and releases it gradually.
What this means in the kitchen: The cooking temperature changes gradually, creating a gentle, stable cooking environment. The stored heat also means cooking continues after the flame is reduced—or, in some recipes, after it is turned off.
Heat Comes From More Than the Flame
Once the ceramic body is thoroughly heated, the donabe itself becomes part of the cooking process.
Heat isn't coming only from the burner underneath. The heated bottom, sides and lid all transfer energy toward the food.
This helps create the enveloping heat characteristic of donabe cooking.

Put the lid on a donabe and something else important happens.
Water from the ingredients and cooking liquid becomes steam. That steam circulates through the pot, contacts food and the lid, condenses, and remains part of the cooking environment.

Moisture isn't simply about whether food is wet or dry.

Rice
Good donabe rice isn't simply moist.
The goal is plump, distinct grains with tender interiors. The controlled heating and resting stages allow the rice to absorb water and continue cooking with the stored heat of the donabe.
Depending on the donabe and cooking method, you can also create okoge—the prized layer of lightly toasted rice at the bottom—with its contrasting crisp texture and roasted flavor.
Vegetables
Vegetables can become tender and succulent while retaining their structure.
Rather than relying on large quantities of boiling water, many donabe preparations allow vegetables to cook gently with steam, broth or even some of the vegetables' own released moisture.
Fish
Fish has a relatively narrow window between beautifully cooked and overcooked.
Gentle heat and a moist cooking environment can help produce fish that remains tender, moist and delicate rather than becoming dry and tight.
Chicken & Other Proteins
A donabe doesn't add moisture to meat.
Instead, its gentle heat and covered cooking environment can help limit excessive moisture loss, helping chicken and other proteins remain juicy and succulent.
Soups, Stews & Braises
Once heated, the ceramic body helps maintain a gentle, steady simmer.
Ingredients cook gradually while the flavors from broth, vegetables, proteins and seasonings come together.
And because the cooking liquid becomes part of the finished dish, the flavors and many of the compounds released by the ingredients remain part of what you eat.
Gentle Cooking Can Help Protect What's in the Food
Cooking changes food—and those changes aren't necessarily good or bad.
Heat can improve digestibility and make certain nutrients more available. But some water-soluble and heat-sensitive nutrients can also be reduced through prolonged cooking or can leach into cooking water.

What About Far-Infrared Rays?
Another interesting characteristic of heated ceramic is far-infrared radiation, commonly abbreviated FIR.
All hot objects emit thermal radiation. When a donabe is heated, its ceramic body emits thermal energy that includes wavelengths within the far-infrared region.
Food absorbs infrared radiation at and near its surface, converting that energy into heat.
Banko technical literature identifies this FIR emission as one of the characteristics contributing to ceramic cooking and reports substantially greater far-infrared emission from heated ceramic than from common metal cookware.
But FIR shouldn't be thought of as mysterious energy that somehow cooks food "from the inside out."
It is better understood as one part of the donabe's overall heating environment.
